I found this delectable dish from all recipes.com and found it to be quite tasty–For this reason, i’m going to share the 4.5/5 star rated recipe with you!
Prep: 25 min Cook: 45 min Ready In: 1 hr & 10 min
Supplies: (makes 8 servings)
-2 big brown potatoes or 5 small red potatoes (I used two big brown potatoes
-1 pound lean Turkey or ground beef (I used ground turkey)
-4 oz of can of sliced mushrooms (I used fresh sliced mushrooms)
-1 (15oz) can of mixed vegetables or fresh cooked veggies (I used a can of corn)
-1 (10.75 oz) can of condensed mushroom soup
– 1 (10.75 oz) can of condensed cream of celery soup
-salt and pepper to tasted
-3 TBS of butter
-OPTIONAL: add some shredded cheese to the top of the potatoes when it comes out of the oven!
-Preheat oven to 350 degrees F (175 degrees C). Coat a 9×13 baking dish with cooking spray.
-Bring a large pot of salted water to a boil. Cook potatoes in boiling water until tender, about 15 minutes. Drain, reserving some of the cooking liquid. Mash potatoes with a little of the cooking liquid. Set aside.
-In a large skillet, cook ground beef until brown over medium-high heat. Drain fat from pan. Stir in mushrooms, mixed vegetables, mushroom soup, celery soup, and salt and pepper; heat through. Pour into prepared baking dish, cover with mashed potatoes, and dot with butter. NOTE: If you cooking for 2-4 people you can divide the recipe into two pie dishes–you bake one now and save one for later!
-Bake in preheated oven for 30 minutes, or until potatoes are golden and beef and vegetable mixture is hot and bubbly– & Voila!! Dinner is a piece of PIE!
